Stuffed Jalapeño

Ingredients

  • 1 pound flaked crab meat
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1 clove minced garlic
  • 1/4 cup milk
  • 1 egg
  • 1/4 cup cracker meal
  • 12 fresh jalapeños
  • 1 dill pickle
  • 1/4 cup onions, finely chopped

Instructions

  1. Cut peppers in half lengthwise. Boil peppers for approx 5 minutes and cool slightly. Using fresh peppers, discard paring seeds and core carefully.
  2. In a large mixing bowl, combine crab meat, pickle, onions, and seasonings carefully.
  3. Stuff pepper halves with crab mixture and press stuffing around pepper. Set peppers aside.
  4. Prepare breading mixture. In a large mixing bowl, mix 1 egg, 1/4 cup milk, and 1/4 tsp each salt and pepper.
  5. Dip peppers in egg mixture, then cracker meal. Repeat procedure.
  6. Deep fry at 365 degrees until golden brown. Drain on absorbent paper.
  7. Makes approx 2 dozen hors d'oeuvres.
