Smoked Brisket

Ingredients

  • 1 untrimmed beef brisket (10 lbs plus)
  • 1 (8 oz) bottle Italian dressing
  • Chili powder
  • 1 whole onion
  • Tomatoes
  • 2 bell peppers
  • Salt, pepper and garlic salt (to taste)

Instructions

  1. Place meat on heavy aluminum foil with fat side down. Salt & pepper meat, sprinkle lightly with chili powder, add garlic salt if desired.
  2. Slice vegetables and place on meat side of brisket. Pour dressing over meat.
  3. Wrap tightly in heavy foil, place brisket in refrigerator overnight.
  4. Place in smoker/barbecue pit at approximately 250 degrees. Slow cook at this temp approximately 6 hours.
  5. Remove meat from foil and place meat side down in pit. Discard marinade ingredients. Cook/smoke at this temp for approximately 2-4 more hours.
  6. During this time you may want to baste with your favorite sauce.
  7. When done, you should be able to slice with a butter knife; if it doesn't fall apart when you take it off the pit, cook/smoke more.
