Rotel Zesty Macaroni & Cheese

Ingredients

  • 3 cups uncooked elbow macaroni, cooked and drained
  • 1/2 cup of margarine
  • 1/2 cup of milk
  • 2 cups of shredded cheddar cheese (#1)
  • 1 can of Rotel (10 oz), diced tomatoes and green chilies

Instructions

  1. Place macaroni in a 9 x 13 inch baking dish.
  2. In a saucepan, melt margarine over low heat, add milk, stirring constantly; cook 1 minute until smooth and heated.
  3. Stir in cheese until melted.
  4. Stir in Rotel.
  5. Pour mixture over macaroni.
  6. Bake uncovered at 350 degrees for 30 minutes or until heated through.
  7. Makes 11 servings.
