Quick Chicken Enchiladas

Ingredients

  • 1 chicken (cut up)
  • 1 can onion soup
  • 5 cloves garlic
  • 1/2 cup cilantro
  • 2 cans condensed chicken soup
  • 1 can condensed milk (12 ounces each)
  • 1 bag of restaurant style corn tortilla chips
  • 1 pound shredded cheese

Instructions

  1. Boil chicken & pull meat into small pieces.
  2. Chop onion & garlic & sauté in butter.
  3. Mix soup & condensed milk into onion & garlic mixture & warm.
  4. Add chips to a large dish (layer thick).
  5. Pour half mixture over chips evenly.
  6. Layer chicken over chips evenly.
  7. Pour soup mixture over entire dish making sure chips are covered.
  8. Layer cheese over chicken, cover with jalapeños if desired & bake until cheese is melted at 350 degrees.
  9. Take out & let sit for 5 minutes.
  10. Serve with sour cream.
