Quick Chicken Enchiladas
Ingredients
- 1 chicken (cut up)
- 1 can onion soup
- 5 cloves garlic
- 1/2 cup cilantro
- 2 cans condensed chicken soup
- 1 can condensed milk (12 ounces each)
- 1 bag of restaurant style corn tortilla chips
- 1 pound shredded cheese
Instructions
- Boil chicken & pull meat into small pieces.
- Chop onion & garlic & sauté in butter.
- Mix soup & condensed milk into onion & garlic mixture & warm.
- Add chips to a large dish (layer thick).
- Pour half mixture over chips evenly.
- Layer chicken over chips evenly.
- Pour soup mixture over entire dish making sure chips are covered.
- Layer cheese over chicken, cover with jalapeños if desired & bake until cheese is melted at 350 degrees.
- Take out & let sit for 5 minutes.
- Serve with sour cream.
