Pan De Polvo (Mexican Cookies)

Ingredients

  • 12 cups flour
  • 2 cups sugar
  • 3 Tbsp cinnamon
  • 2 tsp baking powder
  • 2 tsp cornstarch
  • 2 1/2 cups shortening
  • 2 1/2 cups lard
  • 3/4 to 1 cup water
  • 1 1/2 cups sugar (for topping)
  • 2 1/2 tsp cinnamon (for topping)

Instructions

  1. Preheat oven to 350 degrees.
  2. Sift together all dry ingredients into a bowl and set aside.
  3. In a large bowl, whip together the shortening and lard until nice and light.
  4. Add the dry mixture slowly, one cup at a time (use cups only first).
  5. Knead the dough by hand until you form a good, nice dough ball.
  6. Sprinkle flour on counter top and roll dough out with a rolling pin to a thickness of 1/2 inch.
  7. Use a cookie cutter to cut out cookies.
  8. Place cookies on a cookie sheet and bake for about 20 minutes.
  9. To make topping: Mix together sugar and cinnamon in a bowl.
  10. When cookies come out of the oven, place one by one into the topping mixture and coat well.
  11. Place cookies on a cooling rack to finish cooling.
