Lemon Sherbet

Ingredients

  • 1 1/2 cups of sugar
  • 1 envelope of unflavored gelatin
  • 1 tsp of finely shredded lemon peel or orange peel
  • 3/4 cup of lemon juice
  • 1 cup of milk
  • 4 cups of water
  • A few drops of yellow food coloring

Instructions

  1. In a saucepan, mix sugar and gelatin; add 3 cups of water and stir until sugar and gelatin dissolve.
  2. Remove from heat. Add lemon peel, lemon juice, milk, and food coloring. Mix well.
  3. Transfer to a 9x9x2 inch baking pan. Cover and freeze for 2-3 hours or until almost firm.
  4. Break mixture into small chunks. Transfer to a chilled bowl and beat with an electric mixer till smooth.
  5. Return to pan, cover, and freeze until firm. Serves 6-20 and makes two quarts.
