Irish Soda Bread

Kevin R. Fuller

Ingredients

  • 4 cups all-purpose flour, plus extra for dusting
  • 1 tsp baking soda
  • 1 tsp salt
  • 1¾ cups buttermilk, at room temperature

Instructions

  1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, and salt.
  3. Make a well in the center and pour in the buttermilk.
  4. Use a fork to gently mix until a shaggy dough forms, being careful not to overmix.
  5. Turn the dough onto a lightly floured surface and knead gently about 5 times.
  6. Shape into a round loaf about 6 inches in diameter and place on the prepared baking sheet.
  7. Use a sharp knife to score a deep "X" on top, about 1 inch deep.
  8. Bake for 35-40 minutes until golden brown and the bottom sounds hollow when tapped.
  9. Transfer to a wire rack and let cool completely before slicing.

Notes

Delightfully rustic with a crisp crust and soft, slightly dense crumb with tangy flavor from the buttermilk. Serve warm with butter and jam.
