Grilled Snapper Fillets/Grilled Shrimp Dinner

Ingredients

  • 4 fillets with skin on
  • 1 pound jumbo shrimp peeled
  • Seafood basting sauce

Instructions

  1. Prepare coals/wood so that they are red hot with little or no flame.
  2. Keeping the grill at least 6" above the coals, place the snapper fillets on the grill skin side down.
  3. Place the shrimp on the grill (whichever side of the shrimp you want down) and baste both with the above basting sauce.
  4. Over hot coals these jobs will be done in less than 10 minutes (skewers are a big plus for use with shrimp).
  5. If not available, please foil the grill so you don't lose the little buggers thru the grill.
  6. This method is great for all kinds of seafood on the grill!
