Crispy Oatmeal Cookies

Ingredients

  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 cup Crisco shortening (don’t use cheaper shortening)
  • 2 beaten eggs
  • 1 teaspoon vanilla
  • 1 1/2 cups sifted flour
  • 1 teaspoon soda
  • 3 cups quick-cook oatmeal
  • 1/2 cup pecans (optional)

Instructions

  1. Thoroughly cream brown sugar, white sugar, and Crisco shortening.
  2. Add beaten eggs and vanilla.
  3. Mix well and then add sifted flour and soda.
  4. Add quick-cook oatmeal and pecans (optional).
  5. On waxed paper (must be waxed paper), scoop out cookie dough into long rolls and wrap. Refrigerate overnight.
  6. Place rolled dough in refrigerator and slice into cookies.
  7. Bake at 350 degrees for 10 minutes.
