
Ingredients
- 1 cup brown sugar
- 1 cup white sugar
- 1 cup Crisco shortening (don’t use cheaper shortening)
- 2 beaten eggs
- 1 teaspoon vanilla
- 1 1/2 cups sifted flour
- 1 teaspoon soda
- 3 cups quick-cook oatmeal
- 1/2 cup pecans (optional)
Instructions
- Thoroughly cream brown sugar, white sugar, and Crisco shortening.
- Add beaten eggs and vanilla.
- Mix well and then add sifted flour and soda.
- Add quick-cook oatmeal and pecans (optional).
- On waxed paper (must be waxed paper), scoop out cookie dough into long rolls and wrap. Refrigerate overnight.
- Place rolled dough in refrigerator and slice into cookies.
- Bake at 350 degrees for 10 minutes.
