
Ingredients
- 2 c. flour
- 2 tsp baking powder
- 1 tsp salt
- 2 tsp cinnamon
- 1 1/3 tsp baking soda
- 1 1/3 c. grated carrots
- 1/3 c. chopped nuts (opt)
- 1/3 c. oil
- 4 eggs
- 2 tsp vanilla
- 1/2 c. juice
- 1/2 c. sugar
- 1/2 c. brown sugar
- 1/2 c. crushed pineapple (drain)
Instructions
- Mix flour, salt, baking powder, cinnamon, and baking soda.
- Add grated carrots, nuts, and pineapple.
- Mix well.
- Add eggs, vanilla, juice, and sugars.
- Mix until smooth.
- Bake at 375°F in a 9x13 pan for 40-45 minutes.
