Brown Sugar Peanut Brittle

Ingredients

  • 1 cup of white sugar
  • 1 cup of brown sugar
  • 1/4 cup of water
  • 1/4 cup of light corn syrup
  • Dash of salt
  • 2 cups of raw peanuts
  • 1 teaspoon of baking soda

Instructions

  1. Butter two large cookie sheets.
  2. In a heavy 4 qt. Dutch oven, combine sugars, water, corn syrup, and salt.
  3. Mix sugars, stirring constantly, and cook until candy reaches hard crack stage (280 degrees).
  4. Cook 4 minutes. The peanuts will roast as they cook.
  5. Remove from heat and thoroughly stir in the baking soda.
  6. Pour onto buttered sheets, trying to spread it as evenly as possible with a knife.
  7. Store in a tightly covered tin. Make sure it is completely cooled first.
  8. Makes about two pounds of candy.
