
Ingredients
- 2-3 boneless chicken breasts, cut in cubes
- 3/4 cup oil
- 2 egg whites
- 2 1/2 tsp. corn starch
- 1 tsp. salt
- 3-4 stalks of green onions, chopped
- 1 can Blue Diamond smoked almonds
- 2 tsp. cooking sherry
- 2 tsp. soy sauce
- 1/4 lb. of Snow peas (about a handful)
Instructions
- Mix corn starch, salt and egg whites.
- Place chicken pieces in mixture and toss until chicken is coated; refrigerate for at least 1 hour.
- Heat oil and cook chicken pieces till golden brown or until chicken is cooked.
- Remove chicken from pan and drain oil, except for approx. 1 tablespoon.
- Add chopped onions, cooking sherry and soy sauce; return chicken to pan.
- Toss all ingredients and sauté till most of the sauce is cooked out.
- Add the snow peas and stir fry with chicken and almonds until tender, approx. 5 minutes.
- Serve over rice.
