Almond Chicken with Snow Peas

Ingredients

  • 2-3 boneless chicken breasts, cut in cubes
  • 3/4 cup oil
  • 2 egg whites
  • 2 1/2 tsp. corn starch
  • 1 tsp. salt
  • 3-4 stalks of green onions, chopped
  • 1 can Blue Diamond smoked almonds
  • 2 tsp. cooking sherry
  • 2 tsp. soy sauce
  • 1/4 lb. of Snow peas (about a handful)

Instructions

  1. Mix corn starch, salt and egg whites.
  2. Place chicken pieces in mixture and toss until chicken is coated; refrigerate for at least 1 hour.
  3. Heat oil and cook chicken pieces till golden brown or until chicken is cooked.
  4. Remove chicken from pan and drain oil, except for approx. 1 tablespoon.
  5. Add chopped onions, cooking sherry and soy sauce; return chicken to pan.
  6. Toss all ingredients and sauté till most of the sauce is cooked out.
  7. Add the snow peas and stir fry with chicken and almonds until tender, approx. 5 minutes.
  8. Serve over rice.
